Gluten Free Spaghetti Sauce Recipe
1 lb lean ground beef or ground chuck
1 stalk celery, chopped
1 onion, chopped
2-3 cloves garlic, diced
1/2 green bell pepper, chopped
1 tbsp olive oil
1 6 ounce can tomato paste
1 8 ounce can tomato sauce
1/2 tsp thyme
1 tsp oregano
2-3 tbsp chopped fresh parsley
1/2 tsp basil
dash cayenne pepper
1/4 tsp black pepper
1/2 cup water
In one pan, bown the ground beef. While the ground beef is cooking, in another pan sautee celery, onion, garlic cloves and green pepper in olive oil until soft. Add remaining ingredients and mix well. When the ground beef is done, add contents of both pans together and stir. Cover and simmer for 10 minutes. Stir again and simmer another two minutes. Serve with a gluten free pasta.

Gluten Free Salmon Spinach Loaf Recipe
1 15 oz can salmon
1 pkg frozen spinach, chopped
1 t garlic powder
1 c onion, finely chopped
1/2 t salt
1/2 t pepper
Drain and clean the salmon; thaw and drain the spinach, combine spinach and salmon. Add seasonings. Mix. Place in a 6 x 9-inch greased baking dish. Bake for 45 minutes at 350 degrees.

Gluten Free White Bread Recipe
Dry Ingredients (Mix Well)
2 cups oriental white rice flour
1 cup gluten-free flour mix
1 1/2 Tablespoons clear gel (4 1/2 teaspoons)
1/4 cup sugar
3 1/2 teaspoons xanthan gum
1 1/2 teaspoons salt
1 cup non-fat dry milk powder
2 1/2 teaspoons active dry yeast
*Note: Clear gel is pharmaceutical grade methylcellulose. Unflavored gelatin may be substituted.
Wet Ingredients
1 teaspoon apple cider vinegar
1 1/2 cups warm water (110-120 degrees)
2 large eggs
1/4 cup corn oil
Makes one 1 1/2 pound loaf
Directions
*Note: Add 1 to 3 tablespoons additional water, mixing well between additions, for softer texture bread. Amount needed depends on humidity and room temperature. In a bread machine, if center of loaf sinks more than 1 1/2 inch in center when cool, using less water or baking the bread longer may solve this problem.
Hand Mixing Method
Grease a 9 x 5-inch loaf pan. Mix all dry ingredients well, including yeast. Blend eggs into warm water using a fork or whisk. Pour water/egg mixture into dry ingredients and mix on slowest speed of mixer until flour is moistened. Add oil and increase speed of mixer, blending all ingredients until you have a smooth creamy batter. Mix two minutes. Add more water for a “creamier” batter if desired. Pour into loaf pan and allow to rise in warm place to top of pan. Preheat oven to 350 degrees. Bake on center rack for 50-60 minutes, till brown. Cool in pan for 3-5 minutes then remove bread from pan and place on rack to finish cooling.
When completely cool, slice and store in an airtight container lined with paper towels. Refrigerate within 48 hours. Keeps 7-10 days.
Bread Machine Method
Mix all dry ingredients well, except yeast. Mix warm water and vinegar. Blend eggs into water using a fork or whisk. Follow the instructions for your bread machine when adding dry and wet ingredienets to the bread pan. Allow to mix 3-5 minutes. Add more warm water if necessary to get a “creamier” batter. Remove baked bread when cooling cycle ends; finish cooling on a rack.

Gluten Free Banana Nut Bread Recipe
1 cup rice flour
3 eggs
1 cup potato starch
1/2 cup sugar
1/2 cup soy flour
1/2 teaspoon salt
3 teaspoon gluten free baking powder
1/2 cup corn oil
3 large or 4 small bananas (mashed)
2 Tablespoon water
1/2 cup chopped nuts
Mix flours, starch and baking powder. Blend together eggs, sugar, salt, oil and water. Blend in the mashed bananas. Stir in the dry ingredients. Add the nuts. Pour into an 8 1/2 x 4-inch loaf pan. Bake at 350 degrees for one hour.

Since recently making a switch to a gluten free diet for my sons, I’ve had to start searching for foods that are free of gluten. Finding gluten-free foods isn’t always an easy task.
